Exit 11 Coffee Cookies  

The holidays are full of work parties and family potlucks and if you’re like us, you said you’d bring the dessert.  We did some digging to find the perfect cookie recipe that would showcase your favorite coffee AND be a hit at the party. These dark roast coffee cookies are the perfect pick-me-up for those late-night holiday parties, with just enough caffeine to keep you up for the drive home. 

The original recipe is a stroke of genius from recipe developer Megan Porta. Her book “Cookie Remix: An Incredible Collection of Treats Inspired By Sodas, Candies, Ice Creams, Donuts and More” can be found on Amazon.  

Ingredients 

3/4 cup salted butter 

1 cup dark brown sugar 

1/2 cup granulated sugar 

1 large egg 

1 teaspoon vanilla extract 

3 tablespoons brewed Exit 11 Peruvian dark roast coffee (decaf can also be used) 

2 cups all-purpose flour 

1/2 cup unsweetened dark cocoa powder 

1 1/2 tablespoons instant coffee granules 

1 1/2 teaspoons baking soda 

1 teaspoon salt 

1 1/2 cups dark chocolate chips 

1/4 cup turbinado sugar 

Directions 

Prep your baking sheets with parchment paper (or aluminum foil) and preheat the oven to 350°F. 

In a large mixing bowl, coming butter, brown sugar, granulated sugar, egg, vanilla and your brewed Exit 11 Peruvian coffee. Mix together until it’s creamy with no lumps. 

In a different bowl, mix together the flour, cocoa powder, instant coffee granules, baking soda and salt. 

Take your wet ingredients and slowly add them into your dry ingredients bowl while stirring, then add as many chocolate chips as your heart desires (or exactly what the recipe calls for – it's your choice!).  

Take cookie size chunks of batter from the bowl, make ball shapes out of them and try to place them 2 inches apart on the baking sheets. If you don’t have enough baking sheets, just put them into the oven in batches, or save the leftover dough for making cookies later! 

Before putting the sheets into the over, press your thumb into the dough ball to make an indent and sprinkle a little turbinado sugar on top. Bake in the oven for 9 – 11 minutes. When the center of the cookies are cooked through, pull them out! Cool the cookies on a wire rack (or put some paper towel down and sit them on the counter!).
